A family of passionate individuals that love all things vinous. We have been making wine in the area for over a decade, and this is our first project on our own. We source only the best fruit from the Niagara region, working closely with growers that share our attention to detail and pursuit of the highest quality. We hope you enjoy!

IN THE CELLAR

Appassimento; Passito; Vin de Paille; Strohwein; Schilfwein; Prošek; Slámové vino; Vin Santo; Vino de Pasas; Caballo Blanco; Wineries from all over the world are embracing the art of drying grapes to concentrate the flavour and structure of the must and resulting wine. We have been using tobacco kilns and we like the results. We hand-harvest the grapes, gently placing each bunch in a single layer and only selecting the healthiest fruit. The kilns provide a perfect environment; plenty of ventilation and air-flow and the cool fall and winter temperatures slow down the process and prevent rot.
