Tasting notes
The fun of this wine is in figuring out where the flavours/aromas of this wine come from: the Petit Verdot brings the pepper, Cabernet Franc the tobacco and the Merlot brings the fruit. Nose of cherry, plum and pepper. Flavours are layered and lovely: red and black fruit, mid-palate full of plum, cherry, cassis, blackberry and smoky tobacco leading to a black pepper finish. Bigger is definitely a good name for this wine and at 15.5% alcohol.

A great wine for grilled meats and firm cheeses.

A blend of Petit Verdot (35%), Cabernet Franc (35%) and Merlot (30%) which went through both natural fermentation and malolactic fermentation – aged for a mere six-and-a-half months in new European oak barrels.

We source only the best fruit from the Niagara region, working closely with growers that share our attention to detail and pursuit of the highest quality. We hope you enjoy!
IN THE CELLAR
Appassimento; Passito; Vin de Paille; Strohwein; Schilfwein; Prošek; Slámové vino; Vin Santo; Vino de Pasas; Caballo Blanco; Wineries from all over the world are embracing the art of drying grapes to concentrate the flavour and structure of the must and resulting wine. We have been using tobacco kilns and we like the results. We hand-harvest the grapes, gently placing each bunch in a single layer and only selecting the healthiest fruit. The kilns provide a perfect environment; plenty of ventilation and air-flow and the cool fall and winter temperatures slow down the process and prevent rot.
