Tasting notes
Beautifully coloured, this wine has an expressive nose of cured meats, dried herbs and black currants and a hint of white pepper. Herbaceous on the palate with almost hop-like flavours and fleshy fruits (plums and late-season cherries), it is incredibly approachable with well-rounded tannins, lively acidity; a perfectly structured wine.
Pairing
A beautiful long finish makes this the perfect wine for richer fare. Try it with a Montreal smoked meat sandwich, beef brisket, short ribs or Chef Cider's Venison Chili.
Cellaring
For a young wine it is certainly enjoyable now but will age until 2025.

Redstone Winery is the latest venture by Moray Tawse and his incredible winemaking team. Named for its red clay soil and large stones, Redstone's 38-acre Lincoln Lakeshore property was purchased in 2009 and is home to an award-winning winery and restaurant. In 2017, they were proudly designated the Canadian Winery of the Year at the National Wine Awards of Canada. The 38-acre estate vineyard, farmed organically, is perfect for maturing late-ripening varietals including merlot, cabernet franc, cabernet sauvignon and syrah. There is also pinot gris on the property. Riesling, sauvignon blanc, and chardonnay from recently acquired Limestone vineyard rounds out the estate portfolio.

THE STORY
In his quest to explore terroir, Moray Tawse leaves no stone unturned. First came his namesake winery in Vineland, ON. Then it was Marchand-Tawse and Domaine Tawse in Burgundy. And now Redstone Winery, in Beamsville, ON.
Moray purchased the Lincoln Lakeshore property, formerly Thomas and Vaughan Estate Winery, in 2009, citing that it was an opportunity to explore a different terroir that he simply couldn’t pass up. Inspired by the red dust which covered everything, including his boots, the first time he strolled the vineyard, he named the new winery Redstone, for its intensely red clay soil and large stones.
The 38-acre estate vineyard, farmed organically, is perfect for maturing late-ripening varietals including Merlot, Cabernet Franc, Cabernet Sauvignon and Syrah. There is also Pinot Gris on the property. Riesling, Sauvignon Blanc, and Chardonnay from recently acquired Limestone vineyard will round out the estate portfolio.
After working closely with the winemakers for over four years, Jessica Otting took on the Assistant Winemaker role in 2018, and as of 2020 assumed the role of Winemaker for both Tawse and Redstone Winery.
Philosophy
We firmly believe that great wine starts in the vineyard. Healthy vines yield quality fruit which in turn gives us a great starting point to make premium wines that are a true expression of our terroir.
Fostering the health of our vines and the soil they grow on requires a labour-intensive and hands-on approach. We tuck and thin the shoots by hand to increase sun exposure and air flow. We keep the yields low by cluster thinning to ensure that all the energy of the vine is focused in fewer grape clusters which then become more concentrated in flavour. We hand-pick our grapes to select the very best fruit. We also proudly practice organic farming. Organic farming feeds the vines and controls diseases without the use of synthetic insecticides, fungicides and fertilizers. We strive to create a diversified balanced ecosystem that generates health and fertility from the vineyard itself. Healthy vines mean less need for outside substances to control diseases and promote growth. By being present in the vineyard, we are able to anticipate and prevent issues. We also get help from our friends from the animal realm. Our chicken feed on bugs, our sheep eat the lower vine leaves to expose the grapes to the ripening sun and using horses instead of tractors whenever we can, helps avoid soil compaction. We believe that a organic wine produced from quality fruit sourced from a healthy vineyard contributes to both the health of the land and the pleasure and well being of the individual enjoying a glass.
PAUL PENDER – Director of Viticulture and Winemaking
Paul Pender has been the acclaimed head winemaker of Tawse winery since 2006, earning the title of Winemaker of the Year at the Ontario Wine Awards in 2011. Under his leadership, Tawse was named Canadian Winery of the year in 2010, 2011 and 2012. Former carpenter and graduate of Niagara College’s Winery and Viticulture program, Paul has a non-interventionist as far as possible philosophy. He is a firm believer that the start of every great wine begins in the vineyard. Passionate about crafting wines expressive of a sense of place, Paul has been instrumental in guiding the vision and the execution of the Redstone project and will continue to lend his expertise and leadership in a consulting role.
JESSICA OTTING – Winemaker
Jess has been enthralled by the world of wine since a very young age; at seventeen she completed her first vintage for her high school placement. After graduating from Niagara College’s Winery & Viticulture program in 2011, Jess took her skills abroad where she took part in a harvest in South Australia and in Tasmania the following year, with a Canadian vintage in between for good measure. Her passion for cool climate wines brought her back to Niagara, and it was not long before she joined the Tawse team to perform all of the laboratory analysis required to make delicious Bench wines.
After working closely with the winemakers for over four years, Jess took on the Assistant Winemaker role in 2018, and earned the title of Winemaker in 2020.
