Tasting notes
It will appeal to lovers of chardonnay and viognier with notes of vanilla, white fruit, white flowers and hazelnuts on the nose. The palate is round and full-bodied. Well balanced with a final hint of citrus and minerality on the finish.
Pairing
Great for veal, white fish and semi-hard cheeses.
Vinification
More than 400 years ago, French explorers and settlers made the banks of the Saint Lawrence river a trading post that would grow to be the second largest French speaking city in the world - Montreal. Naturally they carried their wine culture to the new world and today many producers in Quebec carry on that tradition.
Warm but short summer and severe winters make Quebec a challenging place to make wine but producers have continued to find unique varieties that work with the climate. This wine made with St. Pepin and Chardonnay (18%) was fermented in barrel and aged 12 months in French oak.
A careful selection of our best white grape varieties is performed at the time of pressing. Alcoholic fermentation is made in French oak barrels for a few weeks at a temperature of 14 degrees. 12 months breeding in barrel is accompanied by batonnage to bring fat and roundness. The final assembly is done just before the bottling process.
