Tasting notes

Dark in colour with hints of amber. Complex aromas of maple and ripe fruit recall the nature of Portos. Its creamy and fresh mouth reveals notes of roasted caramel and chocolate. Serve between 14-15°C.

Production

Viticulture

Located in the heart of the Lower Laurentians, the vineyard has established its roots in climatic zone 5a very close to the 45th parallel. It benefits from a climate favorable to the cultivation of the vine and covers 16.5 hectares where 75,000 vine plants are cultivated with care.

Vinification

During the harvest, a batch of grapes is selected and pressed directly without maceration. During fermentation, a grain alcohol mutage is carried out in order to obtain a partial fermentation on this lot. The mutated wine is then blended with a quantity of red wine elaborated so traditional. Aging is done in stainless steel vats for a period about a year. To finalize the product, we add dark maple syrup to bring the sweet side of the product and we fortify it with grain alcohol to arrive at a 16% alcohol level.
