Tasting notes
A very aromatic style offering notes of graphite, violets and blue fruit. Tannins are still quite chalky. A very compelling and dynamic wine with a youthful character. A blend of 72% cabernet sauvignon, 28% petit verdot aged in 50% new french oak. Mouth-filling but not heavy with a substantial degree of flavour and complexity. Natural fruit spice adds dimension to the palate. Still tightly wound. Excellent length. (94 points, Sara d’Amato, winealign.com)

Poetica shines with dramatic effusive light, radiant as a by-product of what its controlled power emits and even more so by how it teases at such a youthful time in its life. Approximately two-thirds cabernet sauvignon meets petit verdot head on and they get together seamlessly so that the quotient acts as a whole, seamless, integrated and in the end varietal matters little. This is one of Niagara’s great chic reds, with amazing acidity and style inscribed throughout the book of what will surely be a very long life. Drink 2021-2031.Tasted November 2019.

2002 vintage - 2007: Ontario vs Bordeaux Tasting
“A Niagara red few people have heard of edged out an illustrious lineup of Bordeaux, including Château Lafite Rothschild 2001 ($349) and Châteaux Margaux 2001 ($339), two trophy labels venerated the world over by people with apparently more money than time to do comparison shopping.” So writes Beppi Crosariol in the Globe and Mail on Feb. 24, 2007. The little-known red he mentions is Southbrook’s 2002 Triomphus Cabernet Merlot (later re-christened Poetica).
The event was an Ontario versus Bordeaux contest, judged by 12 respected wine writers. The wine has since sold out, with only a few library bottles being shared from time to time at Poetica tastings.

Vinification
2015 was a moderate and warm growing season, something that Cabernet Sauvignon and Petit Verdot do well in. Each variety was hand harvested separately, hand sorted, and fermented with naturally occurring wild yeast. CS was fermented in 5 T fermenters with delestage while the PV was fermented in "The Pig" with punchdowns, then, post-pressing sent to barrels for aging. After 18 months of aging, individual barrels were tasted, assessed and blending to produce the best blend. After bottling, this wine rested in bottle for over 12 months prior to release.

Southbrook Vineyards is the epitome and evolution of Bill Redelmeier's love story with wine, the land, and all things “local.” The winery is situated on a 150-acre vineyard in the heart of the Niagara Peninsula wine region of Ontario, Canada. We produce organic and biodynamic wines that earn recognition, from critics and consumers alike, year after year.
From their purchase of the Niagara-on-the-Lake vineyard in 2005, the Redelmeiers committed their energies to sustainable viticulture. By 2008, they had created the first wine estate in Canada to earn both organic and biodynamic certification for its vineyard and winery.
Southbrook is the first biodynamic certified vineyard in Canada - They became officially certified by Pro-Cert Organics, Canada’s national certifier of organic food products, and by Demeter, the international body that oversees biodynamic agriculture. They are also the first winery to achieve LEED Gold Certification, continuing to garner other accolades, notably the Award of Excellence for Architectural Design and an Award of Merit for Green Buildings from the Canadian Institute for Steel Construction.
Southbrook makes every effort to live in harmony with the land. From their biodynamic, organic vineyard they produce fine age-worthy wines, most notably Cabernet Sauvignon, Cabernet Franc, classic Bordeaux blends and Chardonnays.

An inseparable team because their goal is one and the same – to grow the best wines that express their origins with authenticity and integrity. The team is led by Ann Sperling, Director of Winemaking and Viticulture. Ann was integral to Southbrook's transition from winemaker to winegrower, having introduced Bill Redelmeier to the property in Niagara-on-the-Lake that has become our new home. Her commitment to managing our vineyard organically and biodynamically is met with equal dedication by our Vineyard Manager Len Van Hoffen.
Southbrook also has the dedicated " Farm Team" with Linc Farm who take care of the sheep, pigs, chickens and more on the Southbrook Property.
