Tasting notes

Fresh and vibrant primary fruit shines among the rich, mature, aged character of Cipes Ariel. On the palate, relish in complex flavours of lemon custard, warm brioche, candied orange, lemon zest, ripe apple, dried apricot, walnut and ginger. This complexity, creaminess and opulent mouthfeel can only come from extended sur lie bottle aging.

Pairing

A beautiful accompaniment to baked oysters, Dungeness crab, and goat cheese in phyllo pastry.

Cellaring

Enjoy through 2025

John Szabo, MS. This is a recently disgorged bottling of this wine which spent nearly 18 years on lees, something truly unique in the world. I must say the wine is remarkably fresh and lively on the nose, evolved, to be sure, but with fruit still present. Fresh button mushrooms and baked pear, kimchi and rhubarb, mint and dill, sesame and cashew are just the tip of the flavour iceberg in this massively complex ensemble. The palate is crisp, very dry, impeccably balanced and sapid - another sip is irresistible. Terrific, silky texture and fine mousse, too, and the finish lingers on and on and on. Truly a remarkable wine, which only seems to be getting better and better with age. Really fine bubbles, and utterly original in Canada, idiosyncratic to be sure - this must be scored on its sheer complexity and uniqueness. Tasted October 2020.

David Lawrason.  Aged an incredible 17+ years on the lees this is a fully mature, pale gold sparkler based on the Champagne varieties. The nose is very generous and complex with all kinds of dried fried onion, walnut, resin and dried orange and ground cherry (cape gooseberry) fruit. It is medium bodied, fairly rich and intensely flavoured and focused. Impressive stucture and great length. A bit of straw-like oxidation on the finish which is to be accepted of such a mature wine. It is one of those fascinating, idiodyncratic wines that you just have to try for yourself. It ticks the boxes for intensity, complexity and depth. Over to you on flavour profile. Taste Oct 2020

Michael Godel, More pinot (60 per cent) than chardonnay and a splash of meunier is the make-up of this forever in tirage sparkling wine from Summerhill Pyramid Winery. How long you ask? Well, if 17 and a half years is a precise or just the right amount of time enough for you than long lived lees are your friend. Alive yes and also of a funk that would make both James Brown and George Clinton swoon. Wildly sauvage and a full compliment of yogurt, crème frâiche gregariousness, not to mention ginger and kimchi ferments. Holding strong with still persistent acidities (yes, there are several of them) plus this earthy-feathery leafiness that blows in the wind of this singular sparkling wine. Trans-national funk. Scoring this seems inconsequential though there must be a quantitate nod to the near two decades of effort. Drink 2020-2022. Tasted October 2020.

Producer Description

Summerhill Pyramid Winery features organic and biodynamic wine grown in the beautiful Okanagan Valley in Kelowna, British Columbia. Organic practices have been an integral part of Summerhill since the Kelowna vineyard was purchased by the Cipes family in 1986. Producing wine organically has a very meaningful benefit to the environment, and some scientists suggest that eating organic foods greatly benefits our health as well. Aside from these benefits, we believe that organic practices allow for the grapes in our vineyards to honestly express their surroundings, providing deep, terroir-driven qualities that are a true articulation of Okanagan terroir.
