Tasting notes

Shows terrific complexity, belying it's youth with plenty of mature, toasty notes like maple syrup, fenugreek and exotic Szechuan spice, and both dried and fresh citrus - a real tour de force. It's drinking really beautifully at the moment.

Pairing

Enjoy on its own or as the perfect complement to country pâté with wine soaked cherries. Serve chilled at 5-8° C.

Sara d'Amato A pinot noir-based blanc traditional method sparkler from the warmer, sheltered reaches of Niagara's St. David's Bench that features ample toasty autolytic notes due to its 34 months sur lattes. Taught on the palate due to no dosage with notes of jasmine, crisp apple, grapefruit and quince. Very slowly maturing with delicious nervy tension.
