On Seven 'The Devotion' Chardonnay 2021

Medium gold in color, with linden flower, fennel, chamomile, ripe apricot, yellow peach, Bartlett pear purée, wet clay, vanilla, honey, nutmeg and barley sugar.

Pairs with crustaceans and rich finned fish, poultry and pork, especially with saffron, preserved lemon, apple, fennel or mushrooms as bridging flavours, as well as charcuterie and cheese.

Built to age 5 to 10 years from vintage.

Niagara-on-the-Lake

Fruit hand-harvested September 20–21, 2021, at 21.3° Brix.

Grown in calcareous loam and clay soil on the estate vineyard, primarily Dijon clone 76 (planted 2014) with small proportions of clones 95 (2015) and 96 (2018). Green harvested to reduce crop, with clones selected for stable acidity, loose clusters and natural mildew resistance that allow for extended hang time.

Hand-harvested whole clusters were pressed for juice, settled to remove gross lees, and transferred to French oak barrels (25% new, 75% neutral) for wild-yeast fermentation. After 20 months of aging, the wine was coarsely filtered before bottling.
