On Seven The Pursuit Chardonnay 2023

Medium gold in color, with aromas of baked apple, pear, saffron, clover, vanilla and smoke. Rich and oily on entry, both dense and silky, with honeyed apple and pear flavours, oak spice, blanched almonds and wet stone.

Pairs well with crustaceans and rich fish such as halibut or salmon, poultry, and pork with cream or butter sauces. Saffron, preserved lemon, apple, fennel and mushrooms make natural bridging flavours, as do charcuterie and cheese.

Built for both immediate enjoyment and further development in the cellar over the next several years.

Niagara-on-the-Lake

A well-balanced growing season, with fruit hand-harvested at optimal ripeness on October 2, 2023.

Grown in calcareous loam and clay soil on the estate vineyard, from Dijon clone 76 planted in 2014 and selected for its stable acidity, pure fruit character and minerality.

Hand-harvested whole clusters were pressed for juice, settled to remove gross lees, and transferred to French oak barrels (25% new, 75% neutral) for wild-yeast fermentation and 20 months of aging.
