Tasting notes

Nose: Intensely aromatic, this Pet Nat explodes on the nose with lime, fresh ginger, guava, mango, and orange peel, while cumin seed, cinnamon, and rose petals echo throughout.

Palate: The palate brings more fruit, with lychee, starfruit, and pineapple mingling with cardamom and alstroemeria.

Finish: Soft, creamy bubbles and a rich mouthfeel from the lees in bottle are balanced by excellent acidity and freshness.

Pairing

Pair this wine with shucked oysters or fried chicken for a thoroughly enjoyable evening.

Cellaring

Pét-Nat is best enjoyed young and fresh; we recommend drinking within 1-2 years of release to appreciate its vibrant, playful character.

Vintage Notes

A vibrant, aromatic 2021 Muscat Ottonel, harvested and bottled while fermenting to preserve its natural effervescence and intensely fruity, floral character.

Viticulture

Sourced from Marianne Hill Vineyard, 100% Muscat Ottonel grown specifically for this playful, ancestral-method sparkling wine.

Vinification

Harvested on October 5, 2021, the grapes were gently pressed into stainless steel tank and allowed to settle for several days prior to being racked off heavy lees. Fermentation started shortly before the wine was racked off its gross lees. The 2021 Pétillant Naturel was bottled while fermenting to capture carbon dioxide in bottle.

Producer
Producer Description

Founded by Ilya and Nadia Senchuk in 2011 on 11 acres in Winona, at the far western edge of the Niagara Peninsula, Leaning Post Wines built its reputation on single-vineyard, sub-appellation-driven Chardonnay and Pinot Noir. Winemaker Ilya Senchuk sources fruit from a small circle of sites he knows intimately — the estate's own Senchuk Vineyard along with Grimsby Hillside, Keczan, Hemeris and Bock — farmed and vinified with minimal intervention so each site's character comes through clearly in the glass. Leaning Post was an early champion of the Lincoln Lakeshore sub-appellation designation and is Certified Sustainable by Sustainable Winegrowing Ontario. The wines have consistently ranked among Ontario's top producers and are poured in leading restaurants in Toronto, Montreal, London and Copenhagen.
